"Apolis Tea is us: Audrey & Alex. We first met in Alaska 15 years ago, where we both grew up. We both liked adventure and the look of each other. Thirteen years and a couple of kids later we started Apolis Tea. During our combined 25 years in the tea industry, we’ve learned a lot about tea. We’ve also learned the importance of developing long-term relationships you can rely on. This means we have some old-fashioned ideas about being prompt, available, and reliable. Darjeeling Monteviot 1st Flush

Origin:  Kurseong, West Bengal, Darjeeling, India
Flavor:  lilac, herbs, fruity

Darjeeling teas can be tricky - they've been around for so long, you need to represent that "classic" flavor but you still want something interesting in the cup.  This first flush from the Monteviot Estate is a show-stopper.  It has a light body and mild astringency with a warm, familiar flavor (fruit, Muscato grape) but what makes the cup really shine is a distinct lilac aroma and flavor.

The Monteviot Estate was established in 1856, making it one of the oldest tea gardens in Darjeeling.  It is also one of the smallest and therefore specializes in producing high-grade, hand-picked teas.  This estate produces organic teas and has a strong social commitment to their employees.

English Breakfast

Origin:  House Blend
Flavor:  jam, grain, brisk

A wholly different sort of breakfast tea from our Irish Breakfast.  This blend has no Assam but a base of Yunnan instead.  It is smooth with a thick jammy flavor and a bright finish with notes of grape skin.  Excellent black or with milk.

Historically, "English" breakfast teas were predominantly made from Chinese teas which were more expensive than Indian teas.  In contrast, "Irish" breakfast teas leaned more toward the malty, inexpensive teas that came out of colonial India.

Garden Mint

Origin:  House Blend
Flavor:  mint, lavender, rosemary

Made with three types of mint plus aromatic garden herbs, this minty blend is refreshing & light with a touch of rosemary & sweet lavender.  Excellent with a bit of honey or over ice.

Organic Chamomile

Origin:  Croatia
Species:  Matricaria recutitia
Flavor:  honey, pineapple

Chamomile is a staple of every tea lineup but there is a LOT of variation in the appearance and cup.  Our chamomile blossoms brew a mellow, flowery cup that is pleasantly bright with notes of pineapple.  The aftertaste sticks with you and has a honeylike sweetness.

Organic Ginger & Lemon

Origin:  House Blend
Flavor:  earthy, spicy, citrus

A classic flavor combination:  earthy, spicy ginger balanced by bright, juicy lemon.  This blend has a seriously gingery flavor but the tiny osmanthus blossoms and lemongrass give it a nice sweet finish.  Excellent with honey.

Morning Glory

Origin:  house blend
Flavor:  sweet, grapefruit, cantaloupe

Start your day or revive your afternoon with this juicy blend of oolong tea, cantaloupe & grapefruit.  Slightly floral from a touch of orange blossom &  delicious hot or iced.  This is a forgiving tea to brew is almost impossible to make bitter!

INGREDIENTS: oolong tea, natural flavor, orange blossom, grapefruit oil

CAFFEINE: Moderate. Oolong teas typically range from 25-60 mg of caffeine per cup. For comparison, coffee ranges from 80-120 mg per cup.

Vanilla Chai

Origin:  House Blend
Flavor:  cardamom, spices, vanilla

A hearty blend of traditional chai spices (cinnamon, ginger, clove and cardamom) plus organic black tea with a bit of vanilla to round it out.  Smooth enough to drink black, but amazing with milk & sugar.  Excellent over ice.  Blended with 92% organic ingredients.

Honey Mint

Origin:  House Blend
Flavor:  mint, honey, flowers

What goes best with minty green tea?  Honey!  While we couldn't add actual honey, our tiny (but mighty!) osmanthus flowers have a honey-like flavor.  Paired with a touch of orange blossom, this blend is light and refreshing with a flowery aftertaste.  Not to get too carried away, but it makes us think of warm sunny days and bees droning around in the garden.

Blended with 90% organic ingredients.

INGREDIENTS: organic green tea, organic spearmint, orange blossom, organic osmanthus blossom

CAFFEINE: Low. Green teas typically range from 30-50 mg of caffeine per cup but our Honeymint blend is much lower than that since it contains mint and flowers which are cafffeine-free. For comparison, coffee ranges from 80-120 mg per cup.

Peppermint

Origin:  Pacific Northwest, USA
Flavor:  sweet, herbaceous, cooling

Most of the world's peppermint comes from Morocco, but here in the US, the Pacific Northwest is king.  Our peppermint tea brews a sweet cup with a clean herbaceous flavor and seriously minty finish.  Refreshing hot or iced.

Earl Grey

Origin:  House Blend
Flavor:  juicy citrus, brisk

This Earl Grey really showcases our fantastic bergamot oil.  It is cold-pressed from organic Italian bergamots and is surprisingly sweet with none of the "soapy" flavors sometime present in Earl Grey.  The tea brews a bright coppery-red cup that is well balanced and flavorful with a brisk finish.

Victorian Cream

Flavor:  lavender, vanilla, rose

A rich blend of organic black teas with a generous helping of lavender blossoms and rose petals with creamy vanilla. Drink it black or with a splash of milk.  It is especially tasty next to the fire while reading Emily Bronte.
